Buffalo Chicken Stuffed Peppers
Ingredients:
4 Red Bell Peppers
1 cup of tomato sauce
1 cup of chopped cooked chicken
Wing Sauce (Frank’s is my brand), as much as you can stomach
1 cup of mozzarella cheese (really any cheese you have)
2 Cups of Brown Rice
1. Preheat oven to 350 degrees
2. Cut the tops off of the peppers and take out the stem and seeds
3. If needed, cut the bottoms of the peppers slightly so they sit upright in a baking dish
4. Mix together the tomato sauce, chicken, rice, and wing sauce
5. Stuff each pepper with the mixture, leaving space at the top for the cheese
6. Place in a baking dish and bake for 20 minutes
7. Remove from oven and top with mozzarella, continue to bake about 20 minutes- until peppers are soft
Tasty Black Bean Brownies
15 oz can black beans, drained and rinsed
3 large eggs
3 TBAP coconut oil
¾ cup xylitol
½ cup cocoa powder
1 tsp vanilla extract
½ tsp baking powder
Pinch of salt
½ cup chocolate chips
Preparation:
1. Preheat Oven to 350, Spray 8x8 inch cooking pan
2. Place Black Beans in food Processor; process until smooth and creamy
3. Add all ingredients except chocolate chips, pulse until creamy
4. Add Chips, pulse a few times until chips are broken up a bit
5. Pour batter into pan, sprinkle with remaining chocolate chips
6. Bake for 30 to 35 min, cool in pan before serving
Banana Bread
1 ¼ cup spelt Flour
¼ ground flax seed
½ cup rolled oats
¾ cup xylitol
1tsp baking powder
1tsp cinnamon
1-2 eggs
½ apple sauce
½ vanilla yogurt
2 medium bananas
1/3 chocolate chips (optional)
Preparation:
1. Preheat oven to 350
2. Mash bananas and mix with egg, yogurt, xylitol, applesauce, and vanilla extract
3. In a separate bowl, mix the flour, flax seed, baking powder, aots, cinnamon and nutmeg together.
4. Combine dry and wet until just mixed. Fold in chocolate chips. Spoon Mixture into loaf pan.
5. Bake for one hour, cool for ten minutes

It's a surreal feeling to look in the rear view mirror and see life flying by at 120mph to only look ahead again and know that you have no regrets over the last few years of your life. A lot has happend over these few years for both of us, but the joy of our friendship and now marriage has been completely worth it. Just the Beginning
Life has taken some tremendous turns, and it is only just the beginning. On August 25th, 2012, I will marry my best friend; joining together as husband and wife to experience every part of the perfect plan God has placed in front of us. So many possibilities, so many unknowns, so many opportunities to live life as it was meant to be!
